DAM BARYANI (AAJ KI DISH)
Ingredients
Beef in two kg pieces,
rice one and half kg, yogurt two kg, onion half a kg, cloves twenty grams,
large cardamom twenty grams, cumin twenty grams, ginger fifty grams, mint half

How to cook
Grind salt, onion and
ginger and put it on the pieces of meat and keep it for two hours. Grind cumin,
black pepper, mint, green chillies and large cardamom and mix it with half
amount of curd and apply it on the pieces of meat. Heat half the ghee on top of
the cloves in the bottom of the pan and add the meat seasonings. Then fry the
meat well. Wash the rice and add the remaining yoghurt and spread it on the
meat. Cover the pan with flour and turn on the heat. When the sound of ghee
starts coming, understand that the yoghurt is dry. Reduce the heat and simmer
on low heat, open the lid of the pan and heat the remaining ghee and put it on,
close it again and put it on the fire. When the steam started coming out, the
biryani was ready. Present with raita and salad.
